Recipe: Pumpkin Spice Scones

Fall has arrived! It’s the perfect time to get cozy and start baking. The aroma of baked pumpkin and spices is pure Autumn bliss. I can’t think of a better way to enjoy the crisper weather than sitting down with a nice hot cup of coffee or tea and a warm, out-of-the-oven fresh scone.

Ingredients:

For the Scones:
3 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1 1/2 cups cold butter, cut into 1-inch cubes
1/2 cup pumpkin puree
1/2 cup milk
1 teaspoon vanilla extract

For the Maple Cinnamon Glaze:
1 cup powdered sugar
1 tablespoon milk
1 tablespoon maple syrup
1/2 teaspoon cinnamon

Directions:

Preheat the oven to 400 degrees F / 200 degrees C. Prepare a baking sheet with parchment paper and set aside.
In a large bowl stir together the flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves and ginger. Using a fork or a pastry blender, mix the butter into the flour mixture until the mixture is crumbly.

In a separate medium sized bowl, whisk together the pumpkin puree, milk and vanilla extract. Combine the wet ingredients into the dry ingredients to form the dough into a ball. On a lightly floured surface, knead dough 10 to 12 times. Cut the dough in half and form two disks with the palm of your hands. Each circle should be approximately 3/4 to 1 inch thick. Cut each disk into 8 wedges and place on prepared baking sheet. Bake for 16-18 minutes, or until light golden brown. Place on wire rack to cool.

While the scones are cooling, make the glaze by mixing the powdered sugar, milk, maple syrup and cinnamon together. When scones are cool drizzle the glaze over them and let set.
